The Vietnam Records Organization, or VietKings, officially certified the record on Thursday, according to the local authorities.
The giant logo, measuring about six meters by 5.36 meters, was created by the Cannes Hotel branch of Loc An Phat Co. Ltd. during the “Essence of Coconut Cuisine” program in Phu Tan Ward over the September 2 National Day holiday.
Bowls of coconut heart salad were arranged to form a coconut tree, a sail, wave patterns, and the words “Cannes Hotel.”
The dish, made with coconut heart, shrimp, and pork, was chosen because of its strong association with southern Vietnamese cuisine and local coconut culture.
After the record was verified, the salad was served to guests and visitors in an effort to avoid food waste.
The three-day culinary program featured 40 food booths and 10 street-food stalls, showcasing traditional dishes and local specialties in a cashless, countryside-themed setting.
It attracted more than 7,000 visitors.
During the National Day holiday, Vinh Long welcomed an estimated 197,327 visitors, up 11.84 percent year on year, including nearly 14,000 international tourists.
Tourism revenue exceeded VND199 billion (US$7.6 million), rising 15.4 percent from the same period last year.
