KOTO (www.koto.com.au) provides a family environment where the trainees can be themselves and grow into happy, confident young adults ready for the rigors of the hospitality industry and to deal with life’s challenges. The program includes accommodation, healthcare and other living expenses and is free of charge for the trainees to attend.

KOTO Saigon restaurant, which includes a catering service, is where the trainees work to gain practical experience during the program. All profit from the restaurant remains at KOTO and is used to cover the costs of the program for the trainees.

The menu celebrates the flavors and produce of Vietnam, in an innovative way that is delighting locals, expats and tourists.
Items such as aromatic braised pork with taro puree on betel leaves, popcorn chicken with aioli and pickled ginger, and crispy sticky rice with sticky soy sauce and fresh herb salad are among their favorites.

“There’s so much you can do with the local ingredients, its wonderful produce and flavors. We’re showing the trainees how to appreciate the ingredients of their country, while teaching them about cooking techniques from around the world,” said KOTO Saigon head chef, Mr Franky Pham, who’s previous role in his native Australia was as head chef at one of Melbourne’s most popular restaurants.

KOTO Saigon restaurant is housed in a converted villa, down a secluded hem off Hai Ba Trung street in central Ho Chi Minh City. It features indoor and sheltered outdoor areas as well as private dining, bar and conference areas.
