Beyond its celebrated royal cuisine, Hue’s culinary identity is also shaped by humble dishes that reflect the city’s quiet elegance. Among them is “va tron,” a traditional salad made with tropical figs, a local ingredient long associated with the former imperial capital.

At first glance, va resembles the common cluster fig, with green skin, pale flesh, and a pinkish center. Yet locals prize va for its milder taste and richer, nuttier texture. Once reserved for holiday feasts and family gatherings, “va tron” is now widely available across Hue, from traditional eateries to modern restaurants. Though simple to prepare, the dish captures the refined balance that defines Hue cuisine. Thinly sliced figs are combined with shrimp, pork, scallions, Vietnamese coriander, toasted sesame, and roasted peanuts. The ingredients are gently tossed with seasoning until their flavors harmonize.
